Time for something nummy! Banana Bread - Recipe Post #4



Banana bread is one of my favorite things to make because (A) it's super easy (B) who doesn't have a few bananas hanging around and (C) it's the perfect daytime snack AND a quick breakfast fix too! 

Ingredients:
- 1 cup of sugar (I use C&H's really fine Baker's Sugar)
- 8 tablespoons (1 stick) unsalted butter, room temperature
- 2 large eggs
- 3 ripe bananas
- 1 tablespoon milk
- 1 teaspoon ground cinnamon
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt

Preheat your oven to 325 degrees and butter a 9x5x3 in. loaf pan. Then, cream the sugar and butter in a large mixing bowl until it's light and fluffy....add the eggs one at a time, beating well after each addition!
Naturally, this process is fascilitated by my KitchenAid (another good reason to get married! You get great gifts! Haaahaaa!)....




In another small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In yet another bowl, mix together the flour, baking powder, baking soda and salt.
Add the banana mixture to the creamed sugar/butter mixture and stir until combined. Add the dry ingredients, mixing just until flour disappears.
Pour your yummy batter into the prepared pan and bake 1 hour to one hour and 10 minutes...until a toothpick inserted comes out clean as a whistle!
